🧂 Ingredients (Serves 3–4)
Vegetables:
1/2 cup carrots, diced
1/2 cup beans, chopped
1/2 cup green peas (fresh or frozen)
1/2 cup cabbage, shredded
1/2 cup zucchini or bell peppers, chopped (optional)
1 small onion, finely chopped
2–3 cloves garlic, minced
1 tbsp olive oil or butter
Liquid Base:
4 cups vegetable stock or water
1 tbsp cornflour or arrowroot powder (optional, for thickness)
Salt and black pepper to taste
Herbs:
1 tsp dried mixed herbs (oregano, thyme, rosemary)
1 tbsp fresh parsley or coriander, chopped
1/4 tsp crushed red chili flakes (optional)
A pinch of nutmeg (optional, for warmth)
👩🍳 Instructions
Step 1: Sauté Aromatics
Heat oil or butter in a deep pan.
Add garlic and onions, sauté until translucent and fragrant.
Step 2: Cook the Vegetables
Add carrots, beans, peas, cabbage, and any other veggies.
Stir-fry for 3–4 minutes on medium heat.
Step 3: Add Liquid and Simmer
Pour in the vegetable stock (or water).
Season with salt, pepper, and dried herbs.
Let it simmer for 10–12 minutes or until veggies are tender.
Step 4: (Optional) Thicken the Soup
If you prefer a thicker soup, dissolve cornflour in 2 tbsp of water and add to the soup.
Simmer for another 2–3 minutes, stirring to avoid lumps.
Step 5: Finish with Fresh Herbs
Add a pinch of nutmeg (if using) and turn off the heat.
Stir in chopped parsley or coriander for a fresh finish.
