đź§‚ Ingredients (Serves 2)
200g spaghetti or pasta of choice
1 tbsp butter
1 tbsp olive oil
5–6 cloves garlic, finely chopped or minced
1/2 tsp chili flakes (optional)
1 cup fresh cream or heavy cream
1/4 cup grated Parmesan cheese (or any melty cheese)
Salt and black pepper to taste
2–3 tbsp fresh parsley, finely chopped
Extra cheese and parsley for garnish
👩🍳 Instructions
Step 1: Cook the Pasta
Boil the pasta in salted water according to package instructions until al dente.
Reserve about 1/2 cup of pasta water, then drain and set aside.
Step 2: Make the Garlic Butter Base
In a large pan, heat butter and olive oil over medium heat.
Add garlic and sauté until fragrant and slightly golden.
Add chili flakes (if using) and cook for another 30 seconds.
Step 3: Add the Cream & Cheese
Lower the heat and pour in the cream. Stir well.
Simmer for 2–3 minutes until the cream thickens slightly.
Stir in the grated cheese until melted and creamy.
Season with salt and black pepper.
Step 4: Combine Pasta
Add the cooked pasta to the sauce. Toss well to coat.
If the sauce is too thick, add a splash of reserved pasta water to loosen it.
Mix in the fresh parsley.
Step 5: Serve
Plate the pasta, garnish with extra cheese and parsley, and serve hot!
