🧂 Ingredients (Serves 2)
4 slices bread (white, brown, or multigrain)
2 eggs
1 small onion, finely chopped
1 small tomato, finely chopped
1–2 green chilies, finely chopped (adjust to taste)
2 tbsp fresh coriander, finely chopped
¼ tsp turmeric powder
¼ tsp red chili powder
¼ tsp garam masala
Salt to taste
1–2 tsp milk or water (optional – for fluffier eggs)
1 tbsp oil or butter for cooking
Butter (for toasting bread)
🍳 Instructions
Step 1: Prepare the Masala Egg Mix
In a bowl, crack the eggs and beat well with salt, turmeric, red chili powder, and garam masala.
Stir in chopped onions, tomatoes, green chilies, and coriander.
Optional: Add 1–2 tsp milk or water to make the eggs soft and fluffy.
Step 2: Cook the Egg Masala
Heat 1 tbsp oil or butter in a pan.
Pour in the egg mixture and scramble it on low-medium heat until just cooked and soft. Keep it slightly moist, not too dry.
Remove from heat and set aside.
Step 3: Toast the Bread
Lightly butter the bread slices on one side.
Toast on a pan or tawa until crisp and golden (buttered side down). Optionally, toast both sides.
Step 4: Assemble & Serve
Spoon the egg masala on each toast slice evenly.
Garnish with more chopped coriander or a sprinkle of chaat masala for extra zing.
