A hearty Indian curry with boiled eggs nestled in a robust, aromatic masala gravy.

🧂 Ingredients (Serves 3–4)
For the Curry:
4–6 boiled eggs, peeled

2 tbsp oil or ghee

1 bay leaf

1 tsp cumin seeds

1 large onion, finely chopped

1 tbsp ginger-garlic paste

2 medium tomatoes, finely chopped or pureed

½ tsp turmeric powder

1 tsp red chili powder

1½ tsp coriander powder

½ tsp garam masala

Salt to taste

1½ cups water (adjust to desired consistency)

2 tbsp fresh coriander leaves, chopped (for garnish)

Optional (for egg flavor enhancement):
ÂĽ tsp black pepper powder

Pinch of kasuri methi (dried fenugreek leaves)

🍳 Instructions
Step 1: Prep the Eggs
Gently prick the boiled eggs with a fork or knife so they absorb the masala.

Optional: Heat 1 tsp oil in a pan, sprinkle a little turmeric and red chili powder, and lightly sauté the eggs for 1–2 minutes until golden spots appear. Set aside.

Step 2: Make the Masala Base
Heat oil in a deep pan. Add bay leaf and cumin seeds, let them splutter.

Add the onions and sauté until golden brown.

Stir in ginger-garlic paste and cook until the raw smell disappears.

Step 3: Build the Curry
Add tomatoes, cook until soft and oil begins to separate.

Add turmeric, red chili powder, coriander powder, and salt. Mix well.

Pour in water, bring to a gentle boil, and let the gravy simmer for 5 minutes.

Step 4: Add Eggs & Simmer
Add the boiled eggs and simmer the curry for another 5–7 minutes on medium-low heat.

Sprinkle garam masala, black pepper, and kasuri methi (optional). Mix gently.

Step 5: Finish & Serve
Garnish with fresh coriander leaves.

Serve hot with rice, roti, or parathas.

🍽️ Serving Suggestions:
Classic pairing: Egg curry + Steamed Rice + Papad

Rich option: Serve with jeera rice, laccha paratha, or butter naan

Add a side of onion salad or pickle for extra zing.

For a creamier gravy, add 1 tbsp fresh cream or 2 tbsp coconut milk toward the end.

You can blend the onion-tomato masala for a smooth gravy if preferred.

Want it spicier? Add a slit green chili while sautéing the onions.
