Fragrant basmati rice layered with spiced vegetables and aromatic Welza Biryani Masala, slow-cooked to perfection.

For the Rice:
2 cups basmati rice (long-grain, aged)
6 cups water
1 bay leaf
3–4 green cardamoms
4–5 cloves
1 small cinnamon stick
Salt to taste
For the Vegetable Masala:
2 tbsp ghee or oil
1 tsp cumin seeds
1 large onion, thinly sliced
1 tsp ginger-garlic paste
1 green chili, slit (optional)
1 cup chopped carrots
1 cup chopped beans
1 cup cauliflower florets
½ cup green peas
ÂĽ cup curd (plain yogurt)
2 tbsp Welza Biryani Masala
Salt to taste
Handful of fresh coriander & mint leaves, chopped
Juice of ½ lemon
For the Biryani Layering:
A few saffron strands soaked in 2 tbsp warm milk
2 tbsp fried onions (optional, for garnish)
1 tbsp ghee
Extra mint & coriander leaves
🍳 Instructions
Step 1: Cook the Rice
Rinse basmati rice and soak for 20–30 minutes.
Boil water with bay leaf, cardamom, cloves, cinnamon, and salt.
Add soaked rice and cook until 90% done (grains should still have a bite).
Drain and set aside.
Step 2: Prepare the Vegetable Masala
Heat ghee/oil in a deep pan. Add cumin seeds and let them splutter.
Add sliced onions and sauté until golden brown.
Stir in ginger-garlic paste and green chili; cook for a minute.
Add chopped vegetables and sauté for 4–5 minutes.
Whisk curd and mix it into the veggies.
Add Welza Biryani Masala and salt. Cook until vegetables are tender and coated with the masala.
Finish with lemon juice, chopped mint, and coriander. Set aside.
Step 3: Layer and Dum Cook
In a heavy-bottom pot or handi, spread a layer of cooked rice.
Top with half of the vegetable masala.
Add another layer of rice, then the rest of the masala, and finish with the remaining rice.
Drizzle saffron milk, ghee, fried onions, mint, and coriander on top.
Cover with a tight lid. Seal with dough or wrap in foil if needed.
Cook on low heat for 15–20 minutes (or place on a hot tawa to prevent direct heat).
Let it rest for 10 minutes before serving.
🍽️ To Serve
Fluff gently with a fork, taking care not to break the rice. Serve hot with:
Raita (onion-tomato or boondi)
Mirchi ka Salan
Papad or pickle
