đź§‚ Ingredients
🍗 For the Chicken Marinade:
500 g chicken (bone-in preferred)
½ cup thick curd (yogurt)
2 tbsp Welza Biryani Masala
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chili powder (optional, for extra heat)
Salt to taste
Juice of ½ lemon
🍚 For the Rice:
2 cups basmati rice (aged, long grain)
6 cups water
1 bay leaf
4–5 cloves
2–3 green cardamoms
1 cinnamon stick
Salt to taste

2 medium onions, thinly sliced
2 tbsp oil + 1 tbsp ghee
A few mint and coriander leaves (chopped)
A few saffron strands soaked in 2 tbsp warm milk (optional)
1 tbsp rose water or kewra water (optional, for aroma)
🍳 Instructions
1. Marinate the Chicken (Min. 1 Hour, Ideally Overnight)
In a large bowl, mix chicken with curd, Welza Biryani Masala, ginger-garlic paste, turmeric, chili powder, salt, and lemon juice. Cover and refrigerate.
2. Cook the Rice
Wash and soak the rice for 30 minutes.
Bring water to a boil with whole spices and salt.
Add rice and cook until 80–90% done (grains should be firm).
Drain and set aside.
3. Cook the Chicken
In a heavy-bottom pan or biryani pot, heat oil and ghee.
Add sliced onions and fry until golden brown (reserve some for garnishing).
Add marinated chicken and cook on medium heat until it’s no longer raw and the masala thickens. Do not dry it out completely—the gravy helps steam the biryani.
4. Layer the Biryani
In the same pot or a separate handi:
Bottom layer: Half of the chicken mixture
Middle layer: Half of the rice
Sprinkle some fried onions, mint, and coriander
Repeat the layers
Drizzle saffron milk and rose/kewra water
Dot with ghee
5. Dum Cooking (Steam Method)
Cover tightly with a lid or seal with dough.
Place on low flame for 20–25 minutes.
Alternatively, place the pot over a hot griddle/tawa to avoid direct heat and cook for 30 minutes.
Let it rest for 10 minutes before opening.
