A creamy, aromatic chicken curry infused with Mughlai spices and the warm nuttiness of shahi jeera. Perfect for indulgent dinners and special occasions.

For the Chicken:
500 g chicken (bone-in or boneless)
1 cup thick curd (yogurt)
1 tsp ginger paste
1 tsp garlic paste
Salt to taste
1/2 tsp turmeric
1/2 tsp red chilli powder
1/2 tsp garam masala
For the Korma Base:
2 tbsp ghee or oil
1 tsp shahi jeera (caraway seeds)
2 green cardamoms
2–3 cloves
1 small cassia bark
1 bay leaf
1–2 onions, thinly sliced
1/4 cup cashews or almonds, soaked & ground to a paste
1/4 cup fresh cream (optional, for richness)
1/2 cup water (adjust as needed)
A few strands of saffron soaked in warm milk (optional)
👩🍳 Instructions:
Step 1: Marinate the Chicken
In a bowl, mix chicken with curd, ginger-garlic paste, turmeric, chilli powder, salt, and garam masala.
Cover and let it marinate for 30 minutes to 1 hour.
Step 2: Sauté the Whole Spices
Heat ghee in a heavy-bottomed kadhai or pan.
Add shahi jeera, and let it crackle.
Add cardamoms, cloves, cassia, and bay leaf. Sauté for a few seconds until fragrant.
Step 3: Cook the Onions
Add sliced onions and cook until golden brown. This step is crucial for flavor.
Optional: Grind the fried onions to a paste for a smoother texture.
Step 4: Cook the Chicken
Add the marinated chicken to the pan. Cook on high for 5 minutes, stirring well.
Lower the flame, cover, and cook for 10–12 minutes until the chicken is mostly done.
Step 5: Add Nut & Cream Base
Stir in the cashew/almond paste and mix well. Cook for another 5 minutes.
Add a little water to adjust consistency.
Add cream and saffron milk (if using) and simmer for 5 more minutes.
Step 6: Finish
Taste and adjust salt or spice.
Sprinkle a pinch of garam masala on top and turn off the heat.

Shahi Jeera Pulao, Butter Naan, or Laccha Paratha
