A spicy potato stir-fry bursting with red chilli flavor and aromatic Indian spices — perfect for spice lovers!
🧂 Ingredients:
4 medium boiled potatoes, peeled and cubed
2 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp hing (asafoetida)
8–10 curry leaves
2–3 dry red chillies (broken)
2 green chillies, slit or chopped
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chilli powder (adjust to taste)
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Juice of 1/2 lemon (optional)
👩🍳 Instructions:
🔥 Step 1: Tempering the Oil
Heat oil in a kadhai or pan.
Add mustard seeds and let them crackle.
Add cumin seeds, hing, and curry leaves.
Add dry red chillies and green chillies, sauté for a few seconds.
🧄 Step 2: Build the Masala
Add ginger-garlic paste and cook until raw smell disappears.
Add turmeric, red chilli powder, coriander powder, and garam masala.
Sprinkle a few drops of water to avoid burning the spices. Mix well.
🥔 Step 3: Add the Potatoes
Add the boiled and cubed potatoes.
Toss to coat evenly with the masala.
Sauté for 5–7 minutes on medium flame until slightly crisp and well-coated.
🌿 Step 4: Garnish & Serve
Turn off the heat, add fresh coriander, and lemon juice (if using).
Serve hot!
