Warm, peppery, and tangy — a soul-soothing South Indian soup enjoyed with rice or as a drink.

🧂 Ingredients
For Rasam:
1 lemon-sized tamarind ball (or 2 tbsp tamarind paste)

2 medium ripe tomatoes (chopped or mashed)

2½ cups water (adjust to consistency)

1 tsp jaggery (optional, to balance flavors)

Salt to taste

Fresh coriander leaves (for garnish)

Optional:
¼ cup cooked toor dal (for thicker rasam)

½ tsp turmeric powder

For Rasam Powder (if making fresh):
1 tsp black peppercorns

1 tsp cumin seeds

1½ tsp coriander seeds

2–3 dried red chilies

1 tsp toor dal or chana dal

A few curry leaves

Shortcut: Use 1½ tbsp Welza Rasam Powder instead of grinding fresh.

For Tempering:
1 tsp ghee or oil

½ tsp mustard seeds

1 pinch hing (asafoetida)

1 sprig curry leaves

2–3 crushed garlic cloves (optional)

👩🍳 Instructions
1. Prepare Tamarind Water
Soak tamarind in warm water for 10–15 minutes. Extract juice and discard pulp (or dilute tamarind paste in 1 cup water).

2. Make Rasam Base
In a pot, add tamarind water, chopped/mashed tomatoes, turmeric (if using), salt, and jaggery.

Let it boil on medium flame until tomatoes soften and raw smell goes away (6–8 minutes).

3. Add Rasam Powder
Add freshly ground rasam powder or Welza Rasam Masala to the boiling liquid.

Add 1–1½ cups water (and cooked dal, if using) to adjust consistency.

Simmer on low heat for 5–7 minutes — don’t let it boil hard after adding dal.

4. Tempering
Heat ghee/oil in a small pan.

Add mustard seeds and let them splutter.

Add hing, crushed garlic, and curry leaves. Sauté for a few seconds.

Pour this tempering over the rasam.

5. Finish & Serve
Turn off the flame and cover rasam for 5 minutes to let the flavors infuse.

Garnish with chopped coriander leaves.

🍽️ To Serve:
Serve hot with steamed rice and a dollop of ghee.

Or enjoy as a soothing soup on its own.

💡 Tips:
Use Welza Rasam Masala for quick and authentic flavor.

For extra aroma, crush a few fresh peppercorns before serving.

Add a pinch of jaggery to balance sourness if needed.
