A bold, tangy, and spiced tamarind rice dish tempered with mustard, curry leaves, and roasted peanuts — a true South Indian favorite.

🧂 Ingredients
For Tamarind Paste:
1 lemon-sized ball of tamarind (or 2 tbsp thick tamarind paste)

1½ cups hot water (to soak tamarind)

For Spice Powder (Puliyogare Podi):
1 tbsp coriander seeds

1 tbsp chana dal

1 tsp urad dal

4–6 dried red chilies (adjust to taste)

1 tsp black peppercorns

1 tsp sesame seeds

1 tsp methi (fenugreek) seeds

1 tsp cumin seeds

1 tsp mustard seeds

1 tbsp grated dry coconut (kopra) — optional

A few curry leaves

OR: Use 2–3 tbsp of Welza Puliyogare Masala for quick preparation.

For Tempering:
2 tbsp oil (preferably sesame oil)

½ tsp mustard seeds

1 tsp urad dal

1 tsp chana dal

1–2 dried red chilies

2 tbsp peanuts or cashews

1 sprig curry leaves

A pinch of hing (asafoetida)

For Mixing:
3 cups cooked rice (preferably cooled and grainy)

Salt to taste

½ tsp jaggery (optional, to balance tanginess)

👩🍳 Instructions
1. Soak Tamarind
Soak tamarind in hot water for 15–20 minutes. Squeeze and extract thick juice. Set aside.

2. Prepare Puliyogare Podi (If making fresh)
Dry roast all the spice podi ingredients one by one on low flame.

Cool slightly and grind into a coarse powder. Keep aside.

3. Make Tamarind Base
Heat oil in a pan. Add mustard seeds and let them splutter.

Add urad dal, chana dal, red chilies, peanuts, curry leaves, and hing. Fry until golden.

Add the tamarind extract and let it boil for 8–10 minutes until raw smell disappears and it thickens slightly.

Add 2–3 tbsp of the puliyogare podi (or Welza Puliyogare Masala), salt, and jaggery. Mix and simmer for 2–3 more minutes.

The mixture should be thick and aromatic.

4. Mix with Rice
Pour the tamarind mixture over cooled rice.

Gently mix without breaking the grains.

Let it sit for 15–20 minutes for flavors to absorb.

🍽️ To Serve:
Serve with papad, curd, or coconut chutney.

Ideal for lunchboxes or festive offerings.

💡 Tips:
Use cold or day-old rice for best results.

Always prepare extra tamarind base — it stores well in the fridge for up to 10 days.
