South Indian tamarind-flavored noodles with crunchy peanuts, curry leaves, and bold spices — a fusion that's both comforting and exciting!

đź§‚ Ingredients
For the Noodles:
200 g noodles (any variety: hakka, whole wheat, or instant)

Water for boiling

Salt to taste

1 tsp oil (for boiling)

For the Puliyogare Paste:
2 tbsp thick tamarind paste (or soak small lemon-sized tamarind in warm water and extract pulp)

½ tsp turmeric powder

½ tsp jaggery or brown sugar

Salt to taste

2 tbsp water (to dilute paste slightly)

Shortcut: Use Welza Puliyogare Paste or Masala – 2–3 tbsp

For Tempering:
1½ tbsp sesame oil (or any neutral oil)

½ tsp mustard seeds

1 tsp urad dal

1 tsp chana dal

1–2 dried red chilies (broken)

2 tbsp roasted peanuts or cashews

1 sprig curry leaves

A pinch of hing (asafoetida)

2–3 green chilies (optional, slit for extra heat)

👩🍳 Instructions
1. Cook the Noodles
Boil noodles in salted water with a little oil until just cooked (al dente).

Drain and rinse under cold water to stop cooking. Toss with 1 tsp oil and keep aside.

2. Prepare the Puliyogare Mix
Mix tamarind paste, turmeric, jaggery, salt, and water in a small bowl. Set aside.

If using Welza Puliyogare Masala, skip this and go to step 3.

3. Make the Tempering
Heat oil in a wide pan or kadai.

Add mustard seeds and let them splutter.

Add urad dal, chana dal, peanuts/cashews, curry leaves, and red chilies. Sauté until golden.

Add hing and green chilies (if using).

4. Cook the Paste
Pour in the tamarind mixture and simmer for 3–5 minutes until raw smell disappears and it thickens slightly.

(If using Welza Puliyogare Paste, sauté 2–3 tbsp of it in the tempering for a minute.)

5. Add Noodles
Add cooked noodles to the pan and gently toss until evenly coated with the puliyogare mixture.

Stir-fry for 2–3 minutes so the flavors soak in.

🍽️ To Serve:
Garnish with fresh coriander or fried curry leaves.

Serve hot with raita or as-is for a tangy, spicy treat.

Use Welza Puliyogare Masala for a shortcut version with authentic flavor.

You can add sautéed onions, bell peppers, or tofu for extra texture.

Great for using up leftover noodles!
