Cool, spicy, tangy, and bursting with flavor — this green pani takes your golgappa game to the next level.

🧂 Ingredients (Makes ~3 cups of pani)
🌿 For the Green Pani:
1 cup fresh coriander leaves

½ cup fresh mint leaves

1–2 green chilies (adjust to taste)

1-inch piece of ginger

¼ cup tamarind pulp (or 1 tbsp paste)

1 tbsp lemon juice

1½ tsp roasted cumin powder

1 tsp black salt

½ tsp chaat masala

½ tsp regular salt (adjust to taste)

1½ tbsp boondi (optional, for crunch)

2½ to 3 cups chilled water

🧑🍳 Instructions
Step 1: Blend the Base
In a blender, add:

Coriander leaves

Mint leaves

Green chilies

Ginger

Tamarind pulp

Lemon juice

Roasted cumin powder

Black salt, regular salt, and chaat masala

Add a splash of water and blend to a smooth, green paste.

Step 2: Adjust & Chill
Transfer the paste to a bowl or jug.

Add chilled water and mix well. Taste and adjust salt, spice, or tanginess as needed.

Stir in boondi just before serving.

🌟 Tips for Perfect Pani:
Strain the pani after blending for a smooth, clean consistency.

Chill for at least 30 minutes for best flavor.

Add crushed ice cubes for street-style chill.

Serve with crisp puris and your choice of stuffing: spicy mashed potatoes, white peas, chana, or moong sprouts.

Offer a side of sweet tamarind chutney to balance the heat.
