🧂 Ingredients (Makes ~3 cups of pani)

1 cup fresh coriander leaves
½ cup fresh mint leaves
1–2 green chilies (adjust to taste)
1-inch piece of ginger
¼ cup tamarind pulp (or 1 tbsp paste)
1 tbsp lemon juice
1½ tsp roasted cumin powder
1 tsp black salt
½ tsp chaat masala
½ tsp regular salt (adjust to taste)
1½ tbsp boondi (optional, for crunch)
2½ to 3 cups chilled water

Step 1: Blend the Base
In a blender, add:
Coriander leaves
Mint leaves
Green chilies
Ginger
Tamarind pulp
Lemon juice
Roasted cumin powder
Black salt, regular salt, and chaat masala
Add a splash of water and blend to a smooth, green paste.
Step 2: Adjust & Chill
Transfer the paste to a bowl or jug.
Add chilled water and mix well. Taste and adjust salt, spice, or tanginess as needed.
Stir in boondi just before serving.
