A rich and nutty Gujarati sweet made from roasted besan (gram flour), ghee, and aromatic cardamom.
🧂 Ingredients (Makes ~15 pieces)
2 cups besan (gram flour), fine variety
1/2 cup ghee (clarified butter)
3/4 cup powdered sugar (or as per taste)
2 tbsp coarse besan or semolina (optional) – for texture
1/2 tsp cardamom powder
2 tbsp milk
2 tbsp milk powder or khoya (optional, for richness)
2 tbsp chopped almonds & pistachios (for garnish)
1 tsp rose water (optional)
🍳 Instructions
Step 1: Prepare the Flour Base
In a mixing bowl, combine besan and coarse besan/semolina (if using).
Add 2 tbsp milk and rub it into the flour. Let it sit for 10 minutes. This helps in creating a grainy texture.
Step 2: Roast the Mixture
Heat ghee in a heavy pan on low heat.
Add the flour mixture and roast it slowly on low flame, stirring constantly for 15–20 minutes.
The flour should turn golden, aromatic, and the ghee should begin to separate.
Add milk powder/khoya if using and roast for another 2–3 minutes.
Step 3: Cool & Sweeten
Remove the pan from heat and let the mixture cool for 5–7 minutes (not fully cold).
Once warm, add powdered sugar, cardamom powder, and rose water. Mix thoroughly.
Step 4: Set the Barfi
Grease a plate or tray and pour the mixture in.
Flatten evenly using a spatula or the back of a spoon.
Garnish with sliced almonds and pistachios. Press lightly.
Step 5: Cut & Serve
Let it set at room temperature or refrigerate for 30–40 minutes until firm.
Cut into squares or diamonds and enjoy!
