đź§‚ Ingredients (Makes about 1.5 cups paste)
3 tbsp oil or ghee
2 medium onions, finely chopped
1 tbsp ginger paste
1 tbsp garlic paste
2 medium tomatoes, finely chopped or pureed
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
1 tsp red chilli powder (adjust to heat)
1 tsp paprika or Kashmiri chilli powder (for color)
1/2 tsp garam masala
Salt to taste
Water as needed
Optional: 1 tbsp cashew paste or 2 tsp fresh cream for added richness
🍳 Instructions
Step 1: Sauté the Base
Heat oil or ghee in a heavy-bottomed pan.
Add finely chopped onions and sauté on medium heat until golden brown (this step is crucial – be patient).
Step 2: Add Aromatics
Add ginger-garlic paste and cook until the raw smell disappears (about 2 minutes).
Step 3: Add Tomatoes & Spices
Stir in chopped or pureed tomatoes and cook until the oil starts to separate (10–12 minutes).
Add coriander, cumin, turmeric, chilli powder, paprika/Kashmiri chilli, and salt.
Cook for another 5–7 minutes, adding a splash of water if needed to avoid burning.
Step 4: Finish the Paste
Add garam masala and optional cashew paste or cream.
Mix well and cook for 2 more minutes.
🌡️ Cool & Store
Let the paste cool completely.
Store in an airtight container in the refrigerator for up to 5 days, or freeze in small portions for up to 1 month.
🥄 How to Use:
For Veg Curries: Sauté paste, add boiled/sauteed veggies and water/cream.
For Chicken or Paneer: Add protein to paste, cook till coated, then add water, simmer.
As a Base: Combine with coconut milk, cream, or stock for gravies.
