A vibrant, spicy, and hearty South Indian curry with assorted vegetables, roasted spices, and a creamy coconut base.

🧂 Ingredients
For the Vegetables (choose 3–5):
1 cup potatoes (cubed)

½ cup carrots (sliced)

½ cup beans (cut into 1-inch pieces)

½ cup cauliflower florets

½ cup green peas (fresh or frozen)

1 small capsicum/bell pepper (optional, cubed)

Salt to taste

2½ to 3 cups water (for cooking veggies)

For the Curry Base:
2 tbsp oil (preferably coconut oil or vegetable oil)

1 tsp mustard seeds

1 sprig curry leaves

1 large onion (finely chopped)

2 medium tomatoes (finely chopped)

1 tbsp ginger-garlic paste

1–2 green chilies (slit)

For Spice Paste (Roast & Grind):
1½ tsp coriander seeds

1 tsp cumin seeds

1 tsp fennel seeds

½ tsp black peppercorns

2–3 dried red chilies

1-inch cinnamon stick

2–3 cloves

¼ cup grated coconut (fresh or dry)

Dry roast everything except coconut until aromatic. Add coconut and roast till light brown. Cool and grind with water to a smooth paste.
Shortcut: Use 2 tbsp Welza Madras Curry Masala + 2 tbsp coconut milk.

👩🍳 Instructions
1. Cook the Vegetables
Boil or steam all the vegetables until just tender. Don’t overcook. Set aside.

2. Prepare the Base
Heat oil in a pan. Add mustard seeds and let them splutter.

Add curry leaves, then onions. Sauté until golden brown.

Add green chilies and ginger-garlic paste. Cook until raw smell goes away.

Add chopped tomatoes. Cook until soft and oil separates.

3. Add Spice Paste or Masala
Add the ground spice-coconut paste (or Welza Madras Curry Masala + coconut milk) and cook on medium heat for 3–4 minutes.

Add a little water if it sticks, and fry till oil starts separating.

4. Add Vegetables
Add cooked vegetables to the masala. Mix well.

Add ½ to 1 cup water to adjust consistency.

Simmer for 5–7 minutes on low heat to allow flavors to blend.

Adjust salt and spice level if needed.

5. Finish & Garnish
Turn off the heat.

Garnish with fresh coriander leaves and a splash of lemon juice (optional).

🍽️ To Serve:
Serve hot with steamed rice, chapati, dosa, or appam.

Also pairs beautifully with jeera rice or coconut rice.

💡 Tips:
Add coconut milk at the end for a creamy, restaurant-style finish.

You can include paneer or tofu for added protein.
