A fiery and flavorful South Indian chicken curry with coconut and roasted spices — classic comfort food with bold flair!

đź§‚ Ingredients
For the Chicken:
500 g chicken (bone-in or boneless, cut into medium pieces)

1 tsp turmeric powder

Salt to taste

For the Curry Base:
2 tbsp oil (coconut or vegetable oil)

1 tsp mustard seeds

1 sprig curry leaves

2 medium onions (finely chopped)

2 medium tomatoes (finely chopped)

1 tbsp ginger-garlic paste

1–2 green chilies (slit)

Fresh coriander leaves (for garnish)

For Spice Powder (Dry Roast & Grind):
1½ tsp coriander seeds

1 tsp cumin seeds

1 tsp fennel seeds

1 tsp black peppercorns

2–3 dried red chilies

2–3 cloves

1-inch cinnamon stick

2 tbsp grated coconut (optional but adds richness)

Dry roast on medium heat until aromatic. Cool and grind to a powder or paste with a little water.

Shortcut: Use 2 tbsp Welza Madras Curry Masala instead of roasting and grinding.

👩🍳 Instructions
1. Marinate the Chicken (Optional but Recommended)
Mix chicken with turmeric and a pinch of salt. Set aside for 15–20 minutes.

2. Sauté the Base
Heat oil in a heavy-bottomed pan.

Add mustard seeds and let them splutter. Add curry leaves.

Add onions and sauté until golden brown.

Add green chilies and ginger-garlic paste. Cook until raw smell disappears.

3. Add Tomatoes & Spices
Add chopped tomatoes and cook until soft and oil starts to separate.

Add the freshly ground spice powder (or Welza Madras Curry Masala) and mix well. Fry for 1–2 minutes.

4. Cook the Chicken
Add the marinated chicken pieces and coat them well in the masala.

Cook on medium-high heat for 5–7 minutes, stirring occasionally.

5. Simmer the Curry
Add 1 to 1½ cups of hot water depending on your desired gravy consistency.

Cover and simmer on low heat for 15–20 minutes until the chicken is tender and the curry is thickened.

Taste and adjust salt and spice.

6. Finish & Serve
Garnish with fresh coriander leaves.

Serve hot with rice, chapati, idli, dosa, or parotta.

For extra richness, add a splash of coconut milk at the end.

Adjust the number of red chilies and pepper to control the heat level.

Always cook the spice masala thoroughly for depth of flavor.
