A punchy, bold chutney made with garlic, dry red chillies, and a touch of spice — perfect for elevating any Indian meal.
🧄 Ingredients:
15–20 cloves garlic, peeled
8–10 dry red chillies (adjust to heat preference)
1 tsp cumin seeds
1 tbsp oil (preferably sesame or groundnut oil)
Salt to taste
1–2 tbsp water (as needed)
1/2 tsp lemon juice or a pinch of amchur powder (optional, for tang)
🔥 Optional Add-Ins (for variation):
2 tbsp grated dry coconut (for Maharashtrian style)
1 tbsp roasted peanuts (for nutty texture)
1/2 tsp sugar (to balance heat, optional)
👩🍳 Instructions:
Step 1: Soak Chillies
Soak dry red chillies in warm water for 10–15 minutes to soften.
Drain and set aside.
Step 2: Roast Garlic
In a small pan, heat 1 tbsp oil.
Add cumin seeds, then add garlic cloves.
Sauté on medium flame until garlic is slightly golden. Let it cool.
Step 3: Blend
In a blender, add:
Sautéed garlic and cumin
Soaked red chillies
Salt
Optional: coconut or peanuts
A splash of water (just enough to blend)
Grind to a coarse or smooth paste (as preferred).
Finish with lemon juice or amchur powder for a slight tang.
🍽️ Serving Suggestions:
As a side with vada pav, bhakri, parathas, or dal-chawal
Spread in wraps, sandwiches, or kathi rolls
Stir into hot rice with ghee for a quick flavorful meal
