Creamy, fragrant, and delicately sweetened—this classic Indian dessert gets its soul from green cardamom.
đź§‚ Ingredients:
1/4 cup basmati rice
1 litre (4 cups) full-fat milk
1/3 cup sugar (adjust to taste)
4–5 green cardamom pods, crushed or powdered
2 tbsp cashews, chopped
2 tbsp raisins (kishmish)
1 tbsp ghee
A few strands of saffron (optional)
1–2 tbsp chopped almonds or pistachios for garnish
👨🍳 Instructions:
1. Prep the Rice
Rinse rice thoroughly and soak for 20–30 minutes.
Drain and keep aside.
2. Start the Kheer
In a heavy-bottomed pan, bring milk to a boil.
Add soaked rice and stir continuously to avoid sticking.
Simmer on low heat for 30–40 minutes, stirring often, until the rice is soft and the milk has thickened.
3. Infuse Flavor
Add sugar and crushed green cardamom.
Stir well and simmer for another 5–7 minutes.
Optional: Soak saffron in 1 tbsp warm milk and stir it in now for added richness.
4. Prepare the Nutty Tadka
Heat ghee in a small pan.
Fry cashews until golden, then add raisins and sauté until they puff up.
Add this to the kheer and mix gently.
5. Serve
Garnish with slivered almonds or pistachios.
Serve warm or chilled, as preferred.
