Golden garlic, soy-kissed noodles, and a touch of spice — this is comfort food with a crunch!
🧂 Ingredients (Serves 2–3):
200 g noodles (Hakka, ramen, or spaghetti – cooked & drained)
3 tbsp oil (neutral or sesame)
6–8 cloves garlic, finely sliced
2 spring onions, chopped (white and green parts separated)
1 tbsp soy sauce
1 tsp chilli flakes or 1 chopped dry red chilli (adjust to taste)
1 tsp vinegar or lemon juice
1/2 tsp sugar (optional, balances flavor)
Salt to taste
Fresh cracked pepper or a dash of white pepper
Optional: 1 tsp dark soy sauce for richer color
Garnish: chopped spring onion greens, fried garlic chips
🔥 Optional Add-ins:
Sautéed veggies (carrot, bell peppers, cabbage, mushrooms)
Tofu or shredded chicken for protein
👩🍳 Instructions:
Step 1: Cook the Noodles
Boil noodles as per packet instructions.
Drain and toss with 1 tsp oil to prevent sticking. Set aside.
Step 2: Make the Crispy Garlic
Heat oil in a wok or wide pan over medium heat.
Add sliced garlic and fry until golden and crisp. Remove with a slotted spoon and set aside (this is your crispy topping).
In the same oil, add white parts of spring onion and chilli flakes. Sauté for 30 seconds.
Step 3: Toss the Noodles
Add the cooked noodles. Toss well.
Pour in soy sauce, vinegar, sugar, salt, and pepper. Mix everything evenly for 2–3 minutes until heated through.
Add dark soy sauce if using for extra flavor and color.
Step 4: Finish & Serve
Top with crispy garlic, spring onion greens, and a final drizzle of oil if desired.

💡 Welza Twist:
Add a pinch of Welza Ginger Powder or crushed black pepper for extra aroma. You can also toss in a few toasted sesame seeds for crunch!
