A sizzling, aromatic tempering that adds depth, warmth, and South Indian flair to any dal.
🧂 Ingredients:
2 tbsp ghee or oil
1 tsp mustard seeds
1/2 tsp cumin seeds
2–3 dry red chillies
1 pinch asafoetida (hing)
1 sprig fresh curry leaves (10–12 leaves)
1–2 garlic cloves, thinly sliced (optional)
1 small green chilli, slit (optional)
1/2 tsp red chilli powder (for color and spice)
🔥 Instructions:
Step 1: Heat the Fat
In a small tempering pan, heat ghee or oil over medium heat.
Step 2: Add Whole Spices
Once hot, add mustard seeds and let them splutter.
Add cumin seeds, and stir until fragrant.
Toss in the dry red chillies, and a pinch of hing.
Step 3: Sizzle the Curry Leaves
Add curry leaves carefully (they will splatter!).
Stir for a few seconds until crisp and aromatic.
Add sliced garlic and green chilli, if using, and sauté until golden.
Step 4: Finish with Spice
Turn off the heat.
Add red chilli powder to the hot oil and swirl gently—it’ll bloom instantly.
Step 5: Temper the Dal
Pour this sizzling tadka directly over hot dal.
Mix well or let it sit on top for a visual and aromatic punch.
