A homestyle potato curry that’s quick, easy, and full of familiar flavors — perfect for lunchboxes, quick dinners, or everyday meals.
đź§‚ Ingredients:
3 medium potatoes, peeled and diced
2 tbsp oil (vegetable or mustard oil)
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 green chilli, slit (optional)
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp coriander powder
Salt to taste
Water as needed
Fresh coriander leaves, chopped (for garnish)
👩🍳 Instructions:
Step 1: Cook the Base
Heat oil in a pan.
Add mustard seeds and let them splutter, then add cumin seeds.
Add green chilli if using, and sauté briefly.
Step 2: Add Spices
Add turmeric, red chilli powder, and coriander powder. Stir for a few seconds.
Step 3: Add Potatoes
Add the diced potatoes and mix well to coat with the spices.
Add salt and about 1/4 cup of water. Cover and cook on medium heat until potatoes are tender (8–10 minutes), stirring occasionally.
Step 4: Finish
Once cooked, let any excess moisture evaporate and lightly crisp the potatoes if desired.
Garnish with chopped coriander leaves and serve hot.
