A foundational Indian curry base made with tomatoes and spices — perfect for dals, vegetable curries, paneer, eggs, or chicken dishes.
đź§‚ Ingredients:
4 medium ripe tomatoes, finely chopped or pureed
1 large onion, finely chopped
2 tbsp oil or ghee
1 tsp cumin seeds
1 tsp ginger-garlic paste
1/4 tsp turmeric powder
1/2 tsp red chilli powder (adjust to taste)
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Water as needed
👩🍳 Instructions:
Step 1: Sauté the Aromatics
Heat oil or ghee in a pan.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Step 2: Add Ginger-Garlic & Spices
Stir in the ginger-garlic paste and cook for 1–2 minutes until the raw smell fades.
Add turmeric, red chilli powder, and coriander powder. Sauté the spices for 30 seconds.
Step 3: Cook the Tomatoes
Add the chopped or pureed tomatoes and salt.
Cook on medium heat until the tomatoes soften and oil starts to separate (8–10 minutes).
Add garam masala, mix well, and cook for another minute.

Let the curry base cool and store in an airtight container.
Refrigerate for up to 4–5 days
Freeze for up to a month in portioned batches
🍽️ How to Use:
Add boiled lentils or beans for a quick dal
Stir in paneer cubes or sautéed veggies for a fast sabzi
Combine with boiled eggs, chicken, or fish for a hearty curry
Thin out with stock or coconut milk for a spiced curry soup
