🧂 Ingredients (Makes 6 sandwiches)
For the Cinnamon Rolls:
1 cup all-purpose flour
1/2 tsp instant yeast
2 tbsp sugar
1/4 tsp salt
1/4 cup warm milk
1 tbsp soft butter
1/2 tsp vanilla extract
For the Cinnamon Filling:
2 tbsp brown sugar
1 tsp ground cassia cinnamon (or regular cinnamon)
1 tbsp soft butter
For the Ice Cream:
1 pint (500 ml) vanilla ice cream (or flavor of your choice)
Optional: Caramel swirls, nuts, or chocolate chips for mix-ins

Step 1: Make the Dough
In a bowl, combine flour, yeast, sugar, and salt.
Add warm milk, butter, and vanilla. Knead into a soft dough (add a splash more milk if dry).
Cover and let rise for 1 hour or until doubled.
Step 2: Prepare the Filling
Mix together brown sugar and cinnamon in a small bowl.
Step 3: Assemble Cinnamon Rolls
Roll dough into a rectangle (~¼ inch thick).
Spread butter over it and sprinkle evenly with the sugar-cinnamon mix.
Roll tightly and cut into 12 mini rolls.
Place on a lined tray, cover, and let rise 30 minutes.
Step 4: Bake the Rolls
Preheat oven to 180°C (350°F).
Bake rolls for 12–15 minutes or until golden brown.
Let cool completely (important before assembling sandwiches).
Step 5: Assemble the Ice Cream Sandwich
Slice each cinnamon roll in half horizontally.
Scoop or slice firm ice cream and sandwich it between two cinnamon roll halves.
Press gently, wrap in parchment or cling wrap, and freeze for 1 hour to set.
