For Marinating Paneer:
250 g paneer (cut into bite-sized cubes)
1 tbsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala or Welza Paneer 65 Masala
½ tsp black pepper powder (optional)
Salt to taste
1 tbsp lemon juice or vinegar
2 tbsp cornflour
2 tbsp rice flour (for crispiness)
Water as needed to coat
Oil for deep frying or shallow frying
For Tempering:
1 tbsp oil
1 tsp mustard seeds
2–3 green chilies (slit)
2 sprigs curry leaves
4–5 garlic cloves (sliced or chopped)
2 tbsp thick curd (optional, for coating)
1 pinch Kashmiri red chili powder (for color)
👩🍳 Instructions
1. Marinate the Paneer
In a bowl, mix ginger-garlic paste, chili powder, turmeric, coriander powder, garam masala, salt, and lemon juice.
Add cornflour and rice flour, and mix with a little water to make a thick coating on the paneer cubes.
Gently toss the paneer in the marinade until evenly coated. Let it rest for 15–20 minutes.
2. Fry the Paneer
Heat oil in a pan.
Shallow or deep fry the paneer cubes on medium heat until crispy and golden.
Remove and place on a paper towel to drain excess oil.
3. Prepare the Tempering
Heat 1 tbsp oil in a pan.
Add mustard seeds and let them splutter.
Add green chilies, curry leaves, and garlic. Sauté for 30 seconds.
(Optional) Add 2 tbsp thick curd and a pinch of Kashmiri red chili powder. Cook for 1 minute on low flame.
Add the fried paneer cubes and toss everything together until well coated.

Garnish with chopped coriander, lemon wedges, or onion rings.
