A robust and comforting Indian-style spiced tea infused with bay leaf, cardamom, ginger, and cloves — perfect for chilly mornings or cozy evenings.
🧂 Ingredients (Serves 2)
2 cups water
1 cup milk (or to taste)
2 tsp black tea leaves (CTC or Assam tea)
2–3 tsp sugar (adjust to taste)
1 bay leaf (tej patta)
2 green cardamom pods, lightly crushed
2 cloves
1 small piece of cassia bark (dalchini)
1/2 inch piece fresh ginger, grated or crushed
Optional: pinch of black pepper or a tiny bit of fennel seeds
👩🍳 Instructions
Step 1: Boil Spices
In a saucepan, add 2 cups water.
Add the bay leaf, cardamom, cloves, cassia, and ginger.
Bring to a boil and let it simmer for 3–4 minutes to infuse flavors.
Step 2: Add Tea
Add black tea leaves and boil for another 2–3 minutes.
The tea should darken and develop a rich aroma.
Step 3: Add Milk & Sweetener
Add milk and sugar to the pan. Let it come to a gentle boil.
Simmer for 2–3 minutes for a strong brew. Stir occasionally.
Step 4: Strain & Serve
Strain the tea into cups using a fine sieve.
Serve hot with biscuits, pakoras, or a simple snack.
☕ Flavor Notes
The bay leaf adds a deep, almost smoky herbal note that pairs beautifully with the sweetness of milk and spice.
This variation of masala chai is less pungent and more grounding — ideal for digestion and calming nerves.
