A spicy-tangy North Indian dish where baby potatoes are coated in classic achari (pickle-style) masala.

🧂 Ingredients (Serves 3–4)
500g baby potatoes (or regular potatoes, cubed)

2 tbsp mustard oil (or any oil)

½ tsp hing (asafoetida)

1 tsp mustard seeds

1 tsp fennel seeds

1 tsp nigella seeds (kalonji)

½ tsp fenugreek seeds (methi)

1 tsp cumin seeds

1–2 green chilies, slit

Salt to taste

🌶️ For the Masala:
1 tsp red chili powder

½ tsp turmeric powder

1½ tsp amchur powder (dry mango powder)

1 tsp coriander powder

1 tsp mustard seed powder (optional, for extra achari punch)

½ tsp garam masala

2 tbsp curd (yogurt) – whisked

🍳 Instructions
Step 1: Prepare the Potatoes
Boil the baby potatoes until just tender. Peel and set aside.

If using regular potatoes, cube them after boiling and peeling.

Step 2: Prepare the Achari Tempering
Heat mustard oil in a pan until it begins to smoke slightly, then lower the heat.

Add hing, followed by mustard seeds, fennel seeds, nigella seeds, fenugreek seeds, and cumin seeds. Let them crackle.

Add green chilies and sauté for a few seconds.

Step 3: Cook the Masala
Reduce heat and add all the masala powders (red chili, turmeric, coriander, amchur, mustard powder).

Quickly add the whisked curd, stirring constantly to prevent curdling.

Cook on low flame for 2–3 minutes until oil separates and masala thickens.

Step 4: Add Potatoes
Add the boiled potatoes to the masala and toss gently until well coated.

Cover and cook for 5–7 minutes on low flame, allowing the flavors to absorb.

Finish with garam masala and mix well.

Step 5: Serve
Garnish with fresh coriander and a squeeze of lemon juice if desired.

Serve hot with paratha, roti, poori, or even dal-chawal.

💡 Tips:
Mustard oil gives an authentic achari flavor — don’t skip it if possible.

Curd balances the spice and adds a rich texture.

Let the dish sit for 15–20 minutes before serving for deeper flavor infusion.
