4 medium ripe tomatoes, roughly chopped
1 small onion, chopped (optional, for extra depth)
2 cloves garlic, chopped
1/2 inch ginger, chopped
1/2 tsp black pepper powder
1/2 tsp sugar
1 tsp butter or oil
Salt to taste
1/2 tsp red chilli powder (optional for extra heat)
1 tsp cornflour, mixed in 2 tbsp water (optional, for thickness)
1.5 to 2 cups water or vegetable stock
Fresh coriander or cream for garnish
👩🍳 Instructions
Step 1: Sauté the Aromatics
In a pan, heat butter or oil.
Add onion (if using), garlic, and ginger. Sauté for 2–3 minutes until fragrant.
Step 2: Cook Tomatoes
Add the chopped tomatoes, a pinch of salt, and cook until soft (about 5–6 minutes).
Add black pepper, chilli powder, sugar, and stir well.
Step 3: Blend
Allow the tomato mixture to cool slightly, then blend it to a smooth puree using a hand blender or mixer.
Step 4: Simmer Soup
Strain the puree for a smooth texture (optional).
Return to the pan, add water or stock, and bring to a boil.
Add cornflour slurry if you prefer thicker soup. Simmer for 3–4 minutes.
Step 5: Finish & Serve
Adjust salt and pepper to taste.
Serve hot, garnished with fresh coriander, buttered croutons, or a drizzle of cream.
