Smooth, fudgy cashew diamond slices made with just a few ingredients — a royal Indian mithai you can make at home!
🧂 Ingredients (Makes ~15 pieces)
1 cup cashews (kaju) – raw, unsalted
1/2 cup sugar
1/4 cup water
1/4 tsp cardamom powder (optional)
1 tsp rose water or a few strands of saffron (optional)
1 tsp ghee (for greasing)
Silver varak (optional, for decoration)
🔪 Instructions
Step 1: Powder the Cashews
Add cashews to a dry grinder.
Pulse in short bursts to make a fine powder. Do not over-blend or it may release oil.
🔔 Tip: Use room temperature cashews and make sure they're completely dry.
Step 2: Make Sugar Syrup
In a non-stick or heavy pan, combine sugar and water.
Cook on medium heat until the sugar dissolves and forms a one-string consistency syrup (dip a spoon, press between fingers, and stretch — one string should form).
Step 3: Mix in Cashew Powder
Lower the heat and stir in the cashew powder gradually.
Add cardamom and rose water or saffron if using.
Stir continuously on low heat — it will start thickening.
Step 4: Cook the Dough
Keep stirring until the mixture forms a soft, non-sticky dough that starts to leave the sides of the pan (about 8–10 minutes).
🔔 To test: Take a tiny portion, let it cool slightly, and roll into a ball. If it’s not sticky, it’s ready.
Step 5: Set & Cut
Transfer the mixture to a greased surface or parchment paper.
Flatten slightly, place another parchment sheet on top, and roll into 1/4-inch thickness.
Let it cool for 10–15 minutes.
If using, place silver varak over the top gently.
Cut into classic diamond shapes using a sharp knife or pizza cutter.

Store in an airtight container at room temperature for up to 7 days (or refrigerate for longer shelf life).
